Whole Chicken in a Crock Pot

I am a huge fan of the crock pot on a busy weeknight. It is wonderful to come home to a delicious meal that cooked itself while you were at work. After clocking in an almost 10 day today, this chicken was amazing.
What you need:
Whole Chicken (remove giblets and other gross bits)
1 medium onion chopped
2-3 chopped cloves of garlic
bay leaf
Herbs de Provence (or a mix of herbs you like such as rosemary, thyme, etc.)
Truffle infused Olive Oil (You can also use regular Extra Virgin Olive Oil)
salt/pepper
Place the chopped onion along the bottom of the crock pot. Place the chicken on top of the onion, add the garlic, bay leaf, herbs, salt and pepper and drizzle the chicken with olive oil. Place the lid on an cook on low for 4-6 hours.
Because I was out the door about 12 hours before I knew I would be enjoying this chicken, I used a timer. You can plug in the crock pot to the timer and it will turn itself and cook for the time you put in! Perfect! And, you can make stock with the leftover liquid!

This is a yummy recipe! You have given me more reasons to use my crock pot more often. I can imagine roasted chicken that falls right off the bone, right now! The crock pot is a friend of the busy worker, indeed! It allows for healthy cooking too!
