Hearty (Vegan) White Bean, Kale, and Tomato Soup

I was inspired by IGE and the soup she made the other day.  The hubs has been a little under the weather and I was looking for something that would knock that out of his system STAT.  We have no room for sickness in the schedule!  This soup is very tasty and it was ever more tasty the next day.  It also happens to be vegan but this is completely randomly as I just used what I had.

Italian Sausage, Kale, and Butternut Squash Skillet

Maybe it’s in anticipation of all the candy and treats I predict I will consume over the next 48 hours but tonight I was craving my leafy green friend, kale.  It’s always a challenge presenting kale to the hubby so I added some sweet Italian sausage which was excellent next to the bitter kale (and easy for me to pick out- I couldn’t even look at the chicken at the market today).

It’s soup time!

Sausage, Kale, and cannellini bean soup!

My hubby and I love this soup but for very different reasons. He loves it because it involves real (not turkey/soy) sausage. I love it because it involves a giant bunch of kale and it is super easy to make.

Here’s what you need:

Italian sausage
Chicken stock
A big bunch of kale
A can of cannellini beans
2 cloves of garlic
1 medium onion

After you brown the meat, throw in the chopped onion and garlic…

While the onions are becoming translucent, roughly chop your bunch of kale!

Toss the kale onto of the onions/garlic/meat and put the lid on for it to steam. About 10 minutes.

Pour in your stock.

Let it all simmer for 15 minutes or so and add salt and pepper to taste.

Serve with some shredded parmesan and a hunk of crusty bread. Yum!!!

I am officially exhausted after my day and 2 mi on the treadmill so I am going to enjoy this and go to bed!
