I have really been neglecting my blog lately. I haven’t even finished my Thanksgiving posts yet but what can I say, I have a lot going on. On top of finals and work I have some other things that I am dealing with. I am so glad that the semester is coming to a close and I am starting to finish my big projects. I am really looking forward to the break and having some downtime.
Tonight when I got home from school I whipped up a salad to try to break out of my doctoral student eating habits. I am way beyond my frozen pizza consumption allotment. I also managed to work out today for the first time in a few weeks and I am a little sore.
Winter Quinoa Salad

2 cups quinoa, preferably red
5 Tbs. extra-virgin olive oil (I used avocado oil)
1 large red onion, quartered lengthwise and thinly sliced crosswise
2 Tbs. balsamic vinegar
4 oz. mixed greens(about 3 cups)
1 large, crisp apple, such as Fuji or Pink Lady
4 oz. crumbled goat cheese
1 cup walnuts, coarsely chopped
3/4 cup dried cranberries, I used currents
3 Tbs. white wine vinegar
Freshly ground black pepper
Cook the quinoa according to directions. Drain the quinoa and return it to the pot. Cover and let the quinoa rest for 5 minutes; then fluff it with a fork. Let cool to room temperature.
While the quinoa cooks, heat 2 Tbs. of the olive oil in a 12-inch nonstick skillet over medium-high heat. Add the onion and a pinch of salt; cook, stirring frequently, until tender and brown around the edges, 6 to 8 minutes. Add the balsamic vinegar and toss with the onions until the vinegar cooks away, about 1 minute. Remove from the heat and let cool to room temperature.
In a large bowl, mix the quinoa, onions, apple, walnuts, and cranberries.
In a small bowl, whisk the remaining 3 Tbs. olive oil with the white wine vinegar, 1/2 tsp. sea salt, and a few grinds of pepper. Add the dressing to the salad and gently mix it in. Place quinoa mixture over bed of greens, pour over dressing.
I’m not sure how my husband is going to feel about this dinner but I loved it! Went back for seconds!
